Course Description
Sunday, January 18, 2026 Sunday, January 25, 2026 Sunday, February 8, 2026 Sunday, February 15, 2026 12pm - 2pm ET Over four weekends, we’ll cook together and explore the foundations of Palestinian home cooking — not through complicated recipes, but through simple techniques that open up many possibilities. Each session is meant to help you understand the core skills and logic behind this cuisine, so you can cook and adapt Arab dishes confidently at home. The goal is not just to cook, but to understand the spirit of Palestinian and Arab cooking — its generosity and ingenuity, its connection to the land and to well-being, and the way a few staples can stretch and transform into dishes that bring people together around a table. Session 1. JANUARY 18, 2026. Breads and Pastries: We’ll start with one versatile dough and use it to make pita, manaqeesh, and stuffed pastries. Session 2. JANUARY 25, 2026. Stuffed Vegetables & Rolling: Here we learn the key techniques for hollowing, rolling, and stuffing vine leaves, zucchini, and more. We’ll cover family tips for flavor and texture, what to do with leftover filling, and how to apply the concept to almost any vegetable. Session 3. FEBRUARY 8, 2026. The Vegetarian Mezze Feast: We’ll build a mezze table using mostly pantry staples and a few fresh ingredients. You’ll learn how to turn the same base ingredients into different dishes so no meal feels repetitive. We’ll also cover how to keep a well-stocked pantry (and freezer) to create a generous, varied table at a moment’s notice. Session 4. FEBRUARY 15, 2026. The Iconic Falafel Sandwich: We’ll make falafel from scratch along with its accompaniments—hummus, tahini, pickles, and salad—and learn tips for making the best sandwich at home, from prep to storage, so you can pull it together effortlessly anytime the mood strikes.
